  • 1/4 cup water
  • 300g garlic scapes
  • 1/3 Tbsp salt

Seasoning Ingredients

  • 2 Tbsp sugar
  • 4 Tbsp soy sauce
  • 4 Tbsp cooking oil
  • 2 Tbsp sesame oil
  • 1.5 Tbsp corn syrup (or other liquid sweetener)
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

First, prepare 300g of garlic scapes. Wash them thoroughly, trim off the tough ends, and cut them into 4cm lengths for easy eating.

Heat a dry pan over medium heat. Add 50g of dried shrimp and stir-fry for about 1 minute. This process enhances the shrimp’s flavor and adds a nutty aroma.

Place the stir-fried dried shrimp in a sieve and gently shake off any fine powder. This ensures a clean taste and prevents the dish from becoming messy during cooking.

Now, turn the heat under the pan to high and add 1/4 cup of water. Bring it to a boil. Boiling the water over high heat helps keep the garlic scapes extra crisp.

Once the water is rapidly boiling, add the prepared garlic scapes (300g) and 1/3 Tbsp of salt. Stir-fry over high heat until the garlic scapes are slightly wilted and most of the water has evaporated. It’s important to maintain the vibrant green color of the scapes while stir-frying.

When the garlic scapes are almost dry, add the previously stir-fried dried shrimp and continue to stir-fry them together. The umami from the shrimp will infuse into the garlic scapes, making them even more delicious.

Reduce the heat to medium-low. Add 2 Tbsp of sugar first and stir-fry briefly until the sugar crystals start to dissolve. Then, add 4 Tbsp of soy sauce and stir to combine evenly. Be careful not to let the soy sauce burn.

Now, drizzle 4 Tbsp of cooking oil around the edges of the pan, towards the dried shrimp side, and stir-fry. The oil will help blend the flavors of the garlic scapes and shrimp, enriching the overall taste.

Finally, turn off the heat. Add 2 Tbsp of sesame oil, 1.5 Tbsp of corn syrup, and 1 Tbsp of toasted sesame seeds. Mix everything thoroughly until well combined. Your delicious, glossy stir-fried garlic scapes are ready! Enjoy them with a warm bowl of rice.
