My husband mentioned he wanted aged kimchi sushi, so I decided to make it at home! It’s surprisingly simple, and the combination of sweet and vinegary sushi rice, zesty aged kimchi, and a hint of wasabi creates a truly authentic sushi experience. I have a feeling we’ll be making this often!

Sushi Ingredients

  • Aged kimchi, appropriate amount (rinsed in water to remove excess spice and cut to sushi size)
  • 1 can Spam (thinly sliced and grilled)
  • 1 can tuna (drained and mixed with mayonnaise and pepper)
  • Wasabi, a small amount

Sushi Rice (Vinegar Mixture)

  • 3 bowls of cooked rice (cooked with slightly less water than usual)
  • 6 Tbsp rice vinegar
  • 4 Tbsp sugar
  • 2 Tbsp salt

When cooking the rice, add 2-3 pieces of dried kelp (kombu) for enhanced flavor. I used a bit less water than I normally would to achieve a slightly firmer texture.

The key to delicious sushi is the vinegar mixture! Combine rice vinegar, sugar, and salt in a 3:2:1 ratio. For 3 bowls of rice, I used 6 tablespoons of vinegar, 4 tablespoons of sugar, and 2 tablespoons of salt. Stir until the sugar and salt are completely dissolved to create the sushi vinegar.

Once the rice is cooked, let some of the steam escape to cool it slightly. Then, gradually add the sushi vinegar mixture to the rice, about one spoonful at a time, gently folding it in with a rice paddle. Be careful not to mash the rice grains. Mix until each grain is coated and the rice has a glossy sheen.

Rinse the aged kimchi thoroughly under cold running water to wash off some of the spicy seasoning. Then, cut it into bite-sized pieces or strips that are suitable for topping sushi.

If you’d like to add a savory element to your aged kimchi sushi, consider using Spam. Thinly slice the Spam and grill it until golden brown. Grilled Spam pairs wonderfully with aged kimchi.

For a creamy and rich flavor, tuna mayonnaise is a great addition. Drain the oil from the canned tuna thoroughly, then mix it with mayonnaise and a pinch of pepper.
