Cooking Instructions

First, prepare the fresh oysters. Gently rinse them under running water. Then, lightly wash them twice in a mild salt water solution (about 1/2 tsp salt per 1 cup of water) to retain their oceanic aroma. Drain the rinsed oysters thoroughly in a sieve and set aside. Be careful not to wash the oysters too vigorously, as they can break apart.

Peel and wash the radish thoroughly. Slice it into thin julienne strips. Sprinkle about 1-2 tablespoons of salt over the julienned radish and let it sit for 5 minutes to lightly pickle. This process wilts the radish slightly while preserving its crispness. After pickling, squeeze out the excess water firmly by hand. Be cautious not to squeeze too hard, as you don’t want to lose all the delicious moisture from the radish.

Wash the scallions and cut them into approximately 2cm lengths, keeping both the white and green parts. Cutting them too thinly might cause them to break down when mixed with the seasoning, so aim for a moderate thickness.

To the squeezed radish, add the chopped scallions, 1 Tbsp minced garlic, 2 Tbsp gochugaru, 1 Tbsp plum extract, and 1 Tbsp oligosaccharide. Gently mix and massage the ingredients together to coat the radish with the seasoning and color. This step is about allowing the radish to absorb the spicy flavor.

Now, add the oysters, a pinch of salt (adjust to your taste), the remaining 0.5 Tbsp gochugaru, and 2.5 Tbsp vinegar to the seasoned radish mixture. Gently toss the ingredients together, being very careful not to mash the oysters. The key here is to mix minimally to maintain the oysters’ plump, chewy texture. Adding vinegar at the end helps to preserve its fresh, tangy flavor.
