Main Ingredients

  • 1 can (approx. 150g) Tuna, drained
  • 100g Spam or similar processed ham
  • 1/4 head well-fermented aged kimchi (or about 1.5 cups chopped kimchi)
  • 1 stalk green onion
  • 4-5 cups (800ml – 1000ml) water or anchovy-kelp broth

Seasoning & Aromatics

  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Sesame oil
  • 1 Tbsp Oligodang (corn syrup) or sugar
  • 1 Tbsp Vinegar (adjust to your sour preference)
  • 1/2 Tbsp Minced garlic (optional, for added depth of flavor)

Cooking Instructions

Step 1

First, cut the ham and kimchi into bite-sized pieces, about 2cm in length. Cutting them too small can reduce the satisfying chewiness. Slice the green onion diagonally. Heat 1 tablespoon of sesame oil in a pot over medium-low heat, and add the chopped kimchi. Stir-fry the kimchi until it softens and its flavors mellow, which is a crucial step for a delicious stew. Once the kimchi is well stir-fried, pour in 4-5 cups of water or broth and bring to a boil over high heat.

Once the broth is boiling vigorously, add the cut ham and the drained tuna. Stir in 1 tablespoon of gochugaru, 1 tablespoon of oligodang (or sugar), and 1 tablespoon of vinegar. (You can add 1/2 tablespoon of minced garlic here for an extra layer of flavor, if desired.) Mix everything well, cover the pot, and let it simmer over medium heat for about 5-7 minutes to allow the flavors to meld. Finally, add the diagonally sliced green onions and simmer for another minute until fragrant. Your delicious kimchi stew is ready!
