Cooking Instructions
Step 1
Here are some fresh, seasonal aralia shoots. I’ve blanched and stored some, and now I’ll make a delicious seasoned dish with the remaining ones.
Step 2
Bring a pot of water to a boil and add 1 tablespoon of coarse salt. Once boiling, carefully add all the aralia shoots and blanch them for about 1-2 minutes until tender, ensuring they are submerged in the water. Adjust the blanching time depending on the size and type of the shoots.
Step 3
Immediately after blanching, rinse the aralia shoots under cold running water to cool them down. This helps maintain their crisp texture and keeps them fresh. Gently squeeze out as much excess water as possible with your hands. Any remaining water can dilute the seasoning.
Step 4
Once drained, cut the aralia shoots into bite-sized pieces. You can store them in an airtight container or a freezer bag for freezing. This makes them convenient to use later for seasoning or in other dishes.
Step 5
Now it’s time to prepare the delicious seasoning for the blanched aralia shoots. In a bowl, combine 1 tablespoon of gochujang, 1 tablespoon of chogochujang, 1 tablespoon of sugar, 2 tablespoons of vinegar, 1 tablespoon of soy sauce, 1 tablespoon of perilla oil, and 1 tablespoon of perilla seed powder. Mix well to create the seasoning paste.
Step 6
Add the prepared spicy-sweet gochujang seasoning to the aralia shoots. Gently toss them together, being careful not to break the shoots, until the seasoning is evenly coated. This simple yet flavorful seasoned aralia shoot dish is now ready.
Step 7
Your delicious, spicy-sweet seasoned aralia shoots are complete! The harmony of fragrant spring greens and the savory, tangy seasoning is incredibly satisfying and pairs perfectly with rice. Enjoy this delightful spring delicacy!
