Making Nurungji with an Air Fryer and Brewing Nurungji Tea
Make crispy nurungji (scorched rice) effortlessly with your air fryer! This recipe transforms leftover rice into a crunchy delight. Enjoy it as a snack or brew it into a comforting nurungji tea (sungnyung).
Ingredients- Cooked rice (preferably day-old or cooled) – 1 bowl

Step 1
First, gather your ingredients: a bowl of cooked rice (day-old or chilled rice works best as it’s drier) and parchment paper, which is essential for air frying. Letting the rice sit out or refrigerate it beforehand helps remove excess moisture for a crispier result.
Step 2
Line your air fryer basket with parchment paper. Spread the cooked rice thinly and evenly over the parchment paper. Ensure there are small gaps between rice grains so that heat can circulate evenly. If the rice layer is too thick, it might not get crispy all the way through.

Preheat your air fryer to 180°C (350°F). Place the prepared rice into the basket and cook for 25 minutes. It’s a good idea to check on the rice halfway through to prevent it from burning. Cooking times may vary slightly depending on your air fryer model.

After 25 minutes, check the rice. If one side is more browned than the other, or if it’s not yet crispy enough, carefully flip the nurungji over. Cook for an additional 5 minutes at 180°C (350°F) to ensure both sides are evenly golden brown and crisp.

Once both sides are perfectly crisp and golden, remove the nurungji from the air fryer. Let it cool completely on a wire rack. This cooling process further enhances its crispiness. You can enjoy the nurungji as is – it’s a delicious and satisfying snack!

If you’d like to make warm and comforting nurungji tea (sungnyung), break the cooled nurungji into smaller pieces. Place them in a pot and add water. Adjust the amount of water based on how much nurungji you’re using and your preferred consistency.
Step 7
Bring the water to a boil over medium-high heat. Once boiling, reduce the heat to medium-low and simmer for about 5 minutes, or until the rice pieces have softened and the broth is flavorful. This will create a delicious and aromatic sungnyung. You can add a pinch of salt to taste if desired.
