Spicy Kimchi and Saury Stew
How to Cook Delicious Stew with Fermented Kimchi and Canned Saury
Anyone can easily make a delicious canned saury stew! This recipe is simple and guarantees a delightful meal.
Main Ingredients- 1/3 head of well-fermented kimchi, roughly chopped
Seasonings and Other Ingredients- 1/2 Tbsp Doenjang (Korean soybean paste)
- 1/2 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Sesame oil
- 2 Tbsp Gochugaru (Korean chili powder)
- 1 Tbsp Minced garlic
- A pinch of ginger juice (or grated ginger)
- 1 can of saury (small size)
- 1 potato (peeled and cut into large chunks)
- 2 Cups Water
- 1 Tbsp Cheongju (rice wine) (optional, for reducing fishiness)
- 1/2 Tbsp Doenjang (Korean soybean paste)

- 1 Tbsp Minced garlic

- 1 potato (peeled and cut into large chunks)

- 1 Tbsp Cheongju (rice wine) (optional, for reducing fishiness)
Cooking Instructions
Step 1
First, roughly chop about 1/3 of a head of well-fermented kimchi into bite-sized pieces. Place the chopped kimchi in a pot and add 1/2 Tbsp doenjang, 1/2 Tbsp gochujang, 1 Tbsp sesame oil, and 2 Tbsp gochugaru. Sauté this mixture over medium heat for about 5 minutes until the kimchi becomes tender and fragrant. This process mellows the sourness of the kimchi and enhances its savory flavors. (This recipe yields 2 servings).
Step 2
Once the kimchi is softened, add 1 Tbsp minced garlic and a pinch of ginger juice (or a very small amount of grated ginger). Continue to sauté together for another 1-2 minutes. This step allows the aromas of garlic and ginger to meld with the kimchi, deepening the stew’s overall flavor profile.
Step 3
Prepare one small can of saury, a key ingredient for this delicious stew. You can lightly drain the oil from the can, or use it as is.

Add the entire can of saury, including its liquid, to the sautéed kimchi. The liquid from the saury can is rich in flavor and umami, which will make the stew even more delicious. Gently mix to avoid breaking up the saury.

Once all ingredients are combined, pour in 2 cups of water and bring to a boil over high heat. As soon as the stew starts to bubble, add 1 Tbsp of cheongju (rice wine) to help eliminate any fishy odors and add a subtle depth of flavor. (If you don’t have cheongju, you can use mirin or omit this step).
