I had a little bit of cooked sweet potato left over from making pizza a few days ago. Since it was mashed, I was wondering what to do with it. Then, an idea popped into my head, and I decided to try making a simple snack! I thought it would be perfect for a quick treat since I didn’t have a large amount. I had never made them before, so I was filled with anticipation. To my delight, they turned out exactly as I imagined! The crispy exterior and chewy interior were incredibly delicious! I felt so confident knowing I could create such a tasty snack from leftover cooked sweet potatoes. My sons absolutely loved them, saying they were really delicious! Cooking Instructions

First, prepare 250g of cooked and mashed sweet potato. The moisture content can vary depending on the type of sweet potato, so it’s good to adjust the amount of starch based on the dough’s consistency. If it’s too sticky, add a little more starch; if it’s too stiff, add a tiny bit of water or milk to make it smoother.

In a bowl, combine the mashed sweet potato with 70g of potato starch and 4g of salt. Knead the mixture until it forms a cohesive dough. You can use a spatula or your hands. The dough should be firm enough to hold its shape but not too stiff.

Roll out the dough with a rolling pin to about 1cm thickness. Then, cut it into long strips of approximately 1cm width and 1cm thickness to create the sweet potato sticks. If the dough sticks to the knife while cutting, slightly wet the knife or dust it with a little starch for easier handling.

Heat a generous amount of cooking oil in a deep-frying pot to about 170-180°C (338-356°F). Carefully add the sweet potato sticks and deep-fry for about 3-5 minutes, or until they are golden brown and crispy. Be careful not to fry them on excessively high heat, as the outside could burn before the inside cooks. Remove the fried sticks and drain them on paper towels.

Arrange the drained sweet potato sticks in a serving dish or container. They are delicious eaten warm, but they also retain their delightful crispy exterior and chewy interior when cooled. For an extra flavor boost, serve with chili sauce or honey mustard sauce according to your preference!
