Cooking Instructions

Step 1

Today, we’re making Dried Pollack and Radish Soup with Egg. Its clear, refreshing broth is perfect for breakfast or as a hangover remedy. It’s a simple yet satisfying one-bowl meal!

Step 1

Step 2

First, lightly soak the dried pollack in cold water, then gently separate the soft flesh from any tough fins or bones. Cut it into bite-sized pieces, about 2-3 cm long. Heat 2 tablespoons of sesame oil in a pot over medium-low heat. Add the thinly sliced radish and sauté for 2-3 minutes until it becomes slightly translucent. This helps to bring out the radish’s natural sweetness, making the broth even more refreshing. Then, add the prepared dried pollack strips and stir-fry with the radish for another 1-2 minutes to enhance the pollack’s savory flavor.

Step 2

Step 3

Once the radish and pollack are sufficiently stir-fried, pour in the 800ml of pre-made broth (or rice water) and bring it to a boil over high heat. As soon as the soup starts to boil vigorously, add the chopped green onions and reduce the heat to medium. Let it simmer for another 3-5 minutes, allowing the refreshing aroma of the green onions to infuse into the broth.

Step 3

Step 4

When the soup comes to a gentle simmer again, crack 2 eggs into a separate bowl and lightly beat them. Slowly pour the beaten eggs in a circular motion around the edges of the pot. Let the eggs cook undisturbed until they form soft curds. Next, add 1 tablespoon of minced garlic, 1 tablespoon of fish sauce (or soy sauce for soup), and 1 teaspoon of salt to season the broth. Taste and adjust with more salt if needed, or a bit more fish sauce for added umami.

Step 4

Step 5

Voilà! Your delicious and refreshing Dried Pollack and Egg Soup is ready. It features the savory depth of pollack, the crispness of radish, and the tenderness of egg. Enjoy this hearty and satisfying meal with a bowl of hot rice!
