Main Ingredients- Dried squid strips 200g
- Cooking wine or sake 1 Tbsp
- Soy sauce 1.5 Tbsp
- Plum extract 1 Tbsp
- Ginger extract (or a little minced ginger) 0.5 Tbsp
- Water 1 Tbsp
- Perilla oil 0.5 Tbsp
- Sesame seeds 2 Tbsp
Cooking Instructions
Step 1
Let the dried squid strips, which have been in the freezer, thaw at room temperature before use. Sprinkle 1 Tbsp of cooking wine or sake over the thawed squid strips and let them sit for about 10 minutes to soften them up. Gently rub the squid strips with your hands to break apart any clumps. To prevent the dried squid strips from becoming hard when refrigerated, you can lightly coat them with mayonnaise before stir-frying. This is optional but highly recommended for maintaining their chewy texture.
Step 2
In a small bowl or pot, combine 1.5 Tbsp soy sauce, 1 Tbsp plum extract, 0.5 Tbsp ginger extract, and 1 Tbsp water. Mix well. Gently heat this mixture over low heat until it simmers, which helps to cook off the alcohol and meld the flavors.
Step 3
Once the sauce begins to bubble, immediately turn off the heat. Add the prepared dried squid strips to the warm sauce and gently mix to ensure they are evenly coated. Coating the squid strips in the warm sauce helps them absorb the flavors beautifully.
Step 4
Now, turn the heat back on to low and quickly stir-fry the squid strips with the sauce for about 1-2 minutes, just until everything is well combined. Be careful not to overcook, as this can make them tough. Drizzle in 0.5 Tbsp of perilla oil for a nutty aroma and mix quickly.
Step 5
Finally, generously sprinkle 2 Tbsp of sesame seeds for added nuttiness and give it a final gentle toss. Your delicious soy-glazed dried squid strips are ready! Let them cool completely before storing in an airtight container in the refrigerator.
