  • 174g garlic scapes
  • 0.5 Tbsp coarse salt (for blanching)

Seasoning

  • 1 Tbsp gochujang (Korean chili paste)
  • 0.5 Tbsp vinegar
  • 1 Tbsp oligosaccharide (or corn syrup)
  • 0.5 Tbsp perilla oil
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

First, prepare the garlic scapes. Trim off the tough, woody ends of the garlic scapes. Cut off the hard parts to make them tender and easier to eat.

Cut the prepared garlic scapes into bite-sized pieces, about 3 to 4 segments each. Cutting them into manageable lengths will help the seasoning adhere well and make them easier to eat.

Bring a pot of water to a rolling boil, adding 0.5 Tbsp of salt. Adding salt helps to maintain the vibrant green color of the garlic scapes.

While the water is boiling, let’s make the delicious seasoning! In a bowl, combine 1 Tbsp gochujang, 0.5 Tbsp vinegar, 1 Tbsp oligosaccharide, 0.5 Tbsp perilla oil, and 1 Tbsp toasted sesame seeds. Mix them thoroughly. Feel free to adjust the seasoning ratios to your personal taste.

Once the water is boiling, add the prepared garlic scapes and blanch them for about 50 seconds to 1 minute. It’s important to preserve their crisp texture, so be careful not to overcook them. Blanching them briefly will keep them wonderfully crunchy!

Drain the blanched garlic scapes and immediately rinse them under cold running water. This helps to cool them down quickly, further enhancing their crispness.

Ensuring most of the water is removed will prevent the seasoning from becoming watery and ensure a delicious, well-mixed side dish.
