Hello everyone! Today, I’m thrilled to share a recipe for Buchu Geotjeori, a classic Korean salad known for its refreshing and vibrant flavors. We love scallions at my house, so we always have them on hand. It’s incredibly easy to whip up this salad when you’re having grilled meat like pork belly or need a quick side dish. With this simple seasoning sauce, you can easily make delicious kimchi-style scallions or even a nutritious scallion pancake for the kids! (Sadly, my kids only eat scallions when they’re in pancake form ㅠㅠ). Today, I’m introducing our go-to Buchu Geotjeori that we enjoyed with our chicken soup recently!

Essential Ingredients

  • 1.5 bundles of fresh scallions (approx. 150-200g)
  • 1/2 medium onion

Golden Ratio Seasoning Sauce

  • 2 Tbsp gochugaru (Korean chili flakes, fine)
  • 4 Tbsp maesil-cheong (plum extract)
  • 0.5 Tbsp fish sauce (or anchovy sauce)
  • 1 Tbsp white sugar
  • 0.5 Tbsp soy sauce (regular)
  • 0.5 Tbsp vinegar

Cooking Instructions

Step 1

First, wash the fresh scallions thoroughly under running water. After washing, let them drain in a colander for a bit. While the scallions are draining, let’s prepare the delicious seasoning sauce that will define the flavor of your Buchu Geotjeori. (★Making the Golden Ratio Seasoning Sauce!)

Peel the onion, wash it, and then thinly slice it into strips. Slicing it thinly helps the seasoning penetrate better and improves the texture.

Cut the drained scallions into approximately 5cm lengths, making them easy to eat. Cutting them to a manageable size is important, as overly long pieces can be awkward to handle.
