Salad Ingredients- 10 fresh lettuce leaves
- A small bunch of pungent chives
- 1/2 sweet onion
- 1/3 crisp carrot
Golden Dressing- 2 tsp savory soy sauce
- 1 tsp spicy red pepper flakes (gochugaru)
- 1 tsp sweet plum extract (maesilcheong)
- 1 tsp nutty sesame oil
- 1 tsp fragrant toasted sesame seeds
- 0.5 tsp pungent minced garlic
- 0.5 tsp tangy vinegar
- A pinch of whole sesame seeds for garnish

Cooking Instructions

First, prepare the fresh lettuce, chives, onion, and carrot for your geotjeori. You’ll need about 10 lettuce leaves, a small bunch of chives, 1/2 onion, and 1/3 carrot. For the dressing ingredients, gather 2 tsp soy sauce, 1 tsp gochugaru, 1 tsp maesilcheong, 1 tsp sesame oil, 1 tsp toasted sesame seeds, 0.5 tsp minced garlic, 0.5 tsp vinegar, and some whole sesame seeds for the final touch.
Step 2
To bring out the fresh flavor of the vegetables, wash them thoroughly under running water 3-4 times. Make sure to remove all dirt and soil for the best taste.

After washing, thoroughly drain the vegetables using paper towels or a colander. Excess water can dilute the dressing and affect the taste. Tear or cut the lettuce into bite-sized pieces, about 3-4 sections per leaf.
