Savory Bacon Garlic Fried Rice
A Hearty One-Bowl Meal: Bacon Garlic Fried Rice Perfect for Breakfast
My little one tends to pick out vegetables if they’re cut too large, but when I finely mince them, they eat it right up! This recipe is for such picky eaters. I use a chopper to quickly mince the vegetables. (I’ve been using it for years, and it’s truly great value for money!) Feel free to use any vegetables you have on hand; you don’t need to stick to the exact ones listed.
Ingredients- Bacon, 100g (finely chopped)
- Assorted vegetables (onion, carrot, zucchini, bell pepper, etc.), 1 cup (very finely minced)
- Eggs, 2
- Minced garlic, 1 Tbsp (for kids; for adults, use plenty of sliced garlic)
- Soy sauce, 1-2 Tbsp
- Sesame oil, 1 Tbsp
- Sesame seeds, a pinch
Cooking Instructions
Step 1
Since my child doesn’t eat sliced garlic, I made this using minced garlic. This way, they eat it without even noticing! (Success in getting them to eat garlic!) For adults, it’s also delicious with plenty of sliced garlic added for a more robust flavor.
Step 2
Lightly oil the pan and sauté the minced garlic until fragrant. Once the garlic is cooked, add the finely minced vegetables and stir-fry them together. Use minimal oil. The vegetables cook quickly, so don’t overcook them.
Step 3
When the vegetables are partially cooked, add the chopped bacon and stir-fry. The bacon will render its own fat, so you won’t need to add extra oil. The bacon crisps up and adds a delicious flavor.
Step 4
Push the cooked vegetables and bacon to one side of the pan. Crack the 2 eggs into the empty space. A sprinkle of ginger powder or about 1 tsp of mirin (rice wine) over the eggs helps eliminate any eggy smell, resulting in a cleaner taste.
Step 5
If using leftover rice, make sure to break up any clumps so the rice is fluffy. To prevent burning, turn off the heat briefly or lower it to low. Then, gently mix the cooked ingredients and rice with a spatula. Ensure every grain of rice is evenly coated with the seasonings.
Step 6
Season primarily with soy sauce. Pour the soy sauce along the edges of the pan and let it caramelize slightly – this enhances the umami flavor immensely (a tip popularized by Chef Baek Jong-won!). Finally, drizzle with sesame oil and sprinkle with sesame seeds for a delicious bacon garlic fried rice!
