Hamburg Steak Mixture Ingredients

  • 1Kg Ground Beef
  • 1 Tbsp Salt
  • 3 Tbsp Sake (or Mirin, for tenderizing and removing odor)
  • 1 Tbsp Black Pepper
  • 3 Tbsp Ketchup (for flavor and binding)
  • 2 Eggs (as a binder)
  • 100g Breadcrumbs (for texture and moisture absorption)
  • 1 Onion (medium-sized, finely chopped)
  • 3 Tbsp Parsley Flakes (for aroma)
  • 1 Tbsp Sugar (for balanced flavor)

Cooking Instructions

First, finely chop one medium-sized onion. Then, combine the chopped onion with 3 Tbsp of sake (or mirin) in a blender. Blend until you achieve a smooth puree. This step not only adds a delicate onion flavor but also effectively removes any potential gamey smell from the meat.

In a large mixing bowl, place 1Kg of ground beef. Add 1 Tbsp salt, 1 Tbsp black pepper, and the prepared onion-sake puree. Gently mix these ingredients together until they are just combined.

Thorough kneading is crucial for developing the proteins in the meat, resulting in a tender and juicy hamburg steak with a delightful texture.
