Main Ingredients- 1 bunch chives (approx. 60g)
- 1 egg
- 12 frozen shrimp
- 1 red chili pepper
- Pinch of salt
- Pinch of black pepper
- 1 Tbsp olive oil
Cooking Instructions
Step 1
First, wash the chives thoroughly, pat them dry, and cut them into bite-sized pieces, about 2-3 cm long. Cut the red chili pepper in half lengthwise, remove the seeds, and thinly slice it to match the chive length.
Step 2
If using frozen shrimp, soak them in cold water for a few minutes until thawed. Pat the thawed shrimp dry with paper towels and finely mince them with a knife. (Tip: Reserve about 4 shrimp to chop coarsely for added texture.)
Step 3
In a large bowl, combine the chopped chives, sliced red chili pepper, and crack in the egg.
Step 4
Season with a pinch of salt and black pepper. Mix everything gently with a spatula or chopsticks until well combined to create the pancake batter. (Tip: Mix in the minced shrimp at this stage for extra flavor and protein.)
Step 5
Heat 1 tablespoon of olive oil in a non-stick pan over medium heat. Pour a ladleful of the batter into the pan and spread it thinly. Cook until golden brown and crispy on both sides. Enjoy your healthy, flourless chive pancakes! (Tip: Spreading the batter thinly ensures it cooks through evenly and becomes nicely crisp.)
