- 3 slices Processed Ham (or bacon)
- 1/2 cup Peeled Shrimp
- A little Fresh Pineapple (to taste)
- 1 Green Onion
- 1/2 Tbsp Minced Garlic
Stir-Fry Sauce- 2 Tbsp ‘Yeondu’ Soy Sauce (or regular soy sauce)

Cooking Instructions
Step 1
First, prepare all the ingredients for your stir-fried rice noodles. Finely chop the green onion. Slice the processed ham into bite-sized pieces; if you don’t have ham, you can use bacon or omit it. Beat the eggs in a bowl. The key to good stir-fried noodles is properly soaking the rice noodles: soak them in cold water for at least 30 minutes until pliable. If you’re short on time, you can use lukewarm water to speed up the process, but the noodles might be slightly less chewy.
Step 2
Before using the soaked rice noodles, lightly season the beaten eggs with ‘Yeondu’ soy sauce. This helps to eliminate any eggy smell and adds a subtle savory depth, resulting in a smoother flavor compared to using just salt.
Step 3
This is the crucial sauce that will bring your stir-fried rice noodles to life! In a small bowl, combine 2 Tbsp ‘Yeondu’ soy sauce, 1 Tbsp fish sauce, 1 Tbsp sugar, and 3 Tbsp water. Whisk everything together until well combined. If you don’t have fish sauce, anchovy sauce makes a great substitute.
Step 4
Heat a wok or a deep frying pan over medium-low heat with a generous amount of cooking oil. Add the chopped green onion and 1/2 Tbsp minced garlic. Stir-fry until fragrant, creating an aromatic green onion oil that will form the flavor base of your dish.
Step 5
Once the green onion is fragrant, tilt the pan to one side and pour the beaten eggs into the pool of green onion oil. Scramble the eggs quickly with a spatula, stirring constantly until they are just cooked and fluffy. This creates lovely fluffy egg pieces throughout the noodles.

Push the scrambled eggs to one side of the pan. Add the sliced ham and shrimp to the pan and stir-fry until the ham is slightly rendered and the shrimp turn pink and are cooked through.

Once the shrimp are cooked, drain the soaked rice noodles and add them to the pan with the other ingredients. Toss everything together gently.

Pour the prepared stir-fry sauce evenly over the noodles and other ingredients. Stir-fry gently, ensuring the sauce coats everything evenly. Keep the heat at a medium level during this stage.
Step 9
When the noodles are well-coated with the sauce and have cooked for a minute or two, just before removing from the heat, add the fresh pineapple chunks and a generous handful of bean sprouts. Toss quickly! You want the bean sprouts to be slightly wilted but still retain their crispness – this is key for a fantastic texture.
Step 10
Your delicious stir-fried rice noodles are ready! Serve immediately while hot. For an extra touch, you can garnish with crushed peanuts or fresh cilantro if you like.
