Golden Scallion and Egg Fried Rice
Simple yet Flavorful! Easy Homemade Scallion Egg Fried Rice Recipe
When your fridge is looking a bit bare, this magical fried rice can be whipped up in just 10 minutes for a satisfying meal. The aromatic flavor of scallions combined with soft scrambled eggs creates a universally loved taste.
Basic Ingredients- 1 bowl of warm cooked rice (approx. 200g)
- 2 fresh eggs
- 1 white part of a scallion (approx. 10cm length)
- A pinch of salt
- 1/2 Tbsp cooking wine (optional)
- 2/3 Tbsp sesame oil
- 2 Tbsp cooking oil
Cooking Instructions
Step 1
First, prepare the white part of the scallion. Wash it thoroughly and chop it as finely as possible. Frying these finely chopped scallions in oil will significantly deepen the flavor of your fried rice.
Step 2
Prepare one bowl of warm cooked rice. Lightly season it with a pinch of salt. Since you’ll be adding eggs, which will also contribute to the overall seasoning, it’s best to start with just a little salt. Mix well to ensure each grain of rice is seasoned.

Crack 2 fresh eggs into a bowl. You don’t need to separate the yolks and whites; use them whole.
Step 4
Pour the 2 eggs over the seasoned rice. Using a spoon or spatula, mix the rice and eggs thoroughly so they are evenly combined and don’t clump together. It’s important to coat each grain of rice with the egg mixture.
Step 5
Now, let’s get cooking! Heat 2 tablespoons of cooking oil in a pan. Add the finely chopped scallions and cook over low heat. Cooking them slowly over low heat allows the scallion’s fragrance to infuse the oil beautifully. This step, called making ‘scallion oil,’ is key to the deliciousness of the fried rice!
Step 6
The scallions will start to turn slightly golden and release a fragrant aroma. At this point, add the rice that has been mixed with the egg. Adding the rice to a sufficiently heated pan will prevent it from clumping and ensure it fries up fluffy.

Turn the heat up to high and stir-fry continuously to prevent the rice from burning. Once the rice begins to look fluffy, add 1/2 tablespoon of cooking wine. Cooking wine helps to eliminate any potential ‘eggy’ smell and enhances the fried rice’s flavor, but it can be omitted if you don’t have it.

Keep stirring the rice with your spatula; you’ll notice it becoming increasingly fluffy. When the rice is well-fried and fluffy, just before turning off the heat, drizzle in 2/3 tablespoon of sesame oil. The nutty aroma of sesame oil will elevate the flavor of the fried rice even further. Turn off the heat, mix in the sesame oil lightly, and it’s ready!
