Main Ingredients

  • 1 cup aged kimchi (approx. 200g)

Seasonings & Others

  • 1 Tbsp sugar (approx. 10g)
  • 1 Tbsp soy sauce (approx. 8g)
  • 1 Tbsp gochugaru (Korean chili flakes) (approx. 6-7g)
  • 2 Tbsp sesame oil (approx. 12-14g)
  • 1 Tbsp mayonnaise (approx. 15g)
  • 1/3 Tbsp doenjang (fermented soybean paste) (approx. 10g)
  • 2 Tbsp chopped green onion (approx. 5-6g)

Cooking Instructions

Prepare the kimchi. You’ll need about 1 cup. It’s best to use kimchi that is slightly fermented, not overly sour, for the best flavor in fried rice. (The kimchi used in the example recipe is from the ‘Jongga’ brand, commonly found in supermarkets.) Finely chop the kimchi and place it in a bowl. Tip: You can also make incredibly delicious kimchi fried rice by finely dicing slightly fermented kkakdugi (cubed radish kimchi)!

Add all the prepared seasonings (sugar, soy sauce, gochugaru, sesame oil, mayonnaise, doenjang) to the chopped kimchi. Mix well by hand, ensuring the seasoning coats the kimchi evenly. This step is crucial for flavor distribution. Heat 3 tablespoons of cooking oil in a pan over medium heat. Once hot, spread the seasoned kimchi evenly in the pan. Cover with a lid and let it cook for about 1 minute.

After 1 minute, remove the lid and check the consistency of the stir-fried kimchi. It should be thick and somewhat dry, with most of the liquid evaporated. If there’s still a lot of liquid, continue to stir-fry uncovered for another minute to reduce it further. Once the kimchi is mostly dry, it’s time to add the rice. Add 2 bowls of cooked rice (equivalent to two 210g packs of instant rice) and stir-fry with the kimchi.

Continue stir-frying until the rice is thoroughly mixed with the kimchi and no white rice is visible. Ensure every grain of rice is coated with the kimchi flavor. Once well combined, spread the rice evenly in the pan. Cover again with the lid and turn the heat to high for 20-30 seconds. This brief high-heat toasting will make the rice grains more distinct and enhance the flavor.
