Basic Ingredients- 10 cherry tomatoes
- 80g ricotta cheese
- A handful of baby greens
- A drizzle of olive oil
- A pinch of black pepper
Ricotta Cheese Topping- 1 tsp honey
- 2 almonds
- 2 cashews
- 1 walnut
- A pinch of salt
- 1 tsp honey
- 2 almonds
- 2 cashews
- 1 walnut
- A pinch of salt
Cooking Instructions
Step 1
1. Prepare the Nuts: Finely chop the almonds, cashews, and walnuts on a cutting board. Chopping them finely will help them blend better with the ricotta cheese and add a pleasant texture.
Step 2
2. Make the Ricotta Mixture: In a small bowl, combine the 80g of ricotta cheese with the chopped nuts, 1 tsp of honey, and a tiny pinch of salt. Mix gently with a spoon until well combined. The sweetness of the honey and the nuttiness of the nuts will create a rich flavor profile with the creamy ricotta.
Step 3
3. Prepare the Cherry Tomatoes: Wash the 10 fresh cherry tomatoes thoroughly under running water. Pat them completely dry with a paper towel; excess moisture can cause the topping to slip. Remove the stems and slice the cherry tomatoes in half.
Step 4
4. Add the Topping: Using a small spoon, carefully place a dollop of the prepared ricotta cheese mixture onto the cut side of each cherry tomato half. Be mindful not to overfill, as it might spill.
Step 5
5. Assemble and Serve: Arrange the washed and dried baby greens attractively on a serving plate. Place the ricotta-topped cherry tomato halves on top of the greens. Finally, drizzle a little extra virgin olive oil over everything and sprinkle with freshly ground black pepper for a finished touch. Don’t worry if you don’t have olive oil or pepper; they are delicious even without them!
