- 5 Tbsp Water
Cooking Instructions
Step 1
Begin by preparing all the ingredients for your Kanpung Mandu. Have your frozen dumplings ready. Finely dice 1/2 onion, 1 green chili pepper, and 1 red chili pepper. Mince 1 tablespoon of garlic and thinly slice or mince about 2 slices of ginger. Also, prepare 2 dried chili peppers for a touch of heat.
Step 2
Thinly slice or mince the ginger and garlic. This preparation method helps to release their aromatic flavors more effectively into the sauce.
Step 3
Now, let’s make the Kanpung sauce. In a bowl, combine 2 tablespoons of soy sauce, 3 tablespoons of vinegar, 2 tablespoons of sugar, 2 tablespoons of cooking wine (like Mirin), and 5 tablespoons of water. Stir well until the sugar is completely dissolved.
Step 4
Prepare your dumplings. This recipe uses small, cute boiled dumplings (mandu), but any type of frozen dumpling will work beautifully. If using boiled dumplings, lightly boil them in water beforehand for a softer texture. They are delicious even when eaten plain!
Step 5
Heat a generous amount of oil in a pan over medium-low heat. Add the dried chili peppers, sliced ginger, and minced garlic. Stir-fry until fragrant, taking care not to burn the garlic and ginger. This step is crucial for infusing the oil with their wonderful aroma.
Step 6
Once the aromatics are fragrant, add the diced onion to the pan. Sauté until the onions become translucent and slightly softened.
Step 7
Next, add the diced green and red chili peppers. Stir-fry briefly with the onions, just long enough to bring out their vibrant colors while keeping them slightly crisp.
Step 8
Pour the prepared Kanpung sauce into the pan and bring it to a simmer. Let the sauce cook until it thickens slightly. If you used large ginger slices, remove them at this stage. (If you minced the ginger, you can leave it in).
Step 9
Finally, add the pre-fried or prepared dumplings to the sauce. Toss quickly to coat the dumplings evenly. The key is to coat them thoroughly without making them soggy – you want to maintain that delightful crispiness.
Step 10
Your delicious Kanpung Mandu is ready! This dish, with its perfect balance of sweet, sour, and spicy flavors, is sure to be a hit with everyone.
