A refreshing cabbage slaw tossed in a zesty soy-based dressing.
Main Ingredients- Fresh Cabbage 600g (shredded thinly)
- Carrot 50g (shredded thinly, optional)
- 1 Tbsp Coarse Salt (for salting the cabbage)
Zesty Oriental Dressing- Onion 90g (finely chopped or for blending)
- 1 Tbsp Dijon Mustard (or your preferred mustard)
- 3 Tbsp Soy Sauce
- 3 Tbsp Apple Cider Vinegar (or regular vinegar)
- 3 Tbsp Olive Oil
- 1 Tbsp Fresh Lemon Juice
- Onion 90g (finely chopped or for blending)
- 1 Tbsp Dijon Mustard (or your preferred mustard)
- 3 Tbsp Soy Sauce
- 3 Tbsp Apple Cider Vinegar (or regular vinegar)
- 3 Tbsp Olive Oil
- 1 Tbsp Fresh Lemon Juice
Cooking Instructions
Step 1
Thoroughly wash the cabbage under running water and then shred it as thinly as possible. If using carrots, shred them thinly as well. Place the shredded cabbage and carrots (if using) in a bowl, add 1 tablespoon of coarse salt (approximately 1% of the cabbage weight), and toss to coat evenly. Let it salt for about 15-20 minutes. Salting draws out excess moisture, helping to maintain the cabbage’s crisp texture.
Step 2
Combine all the dressing ingredients in a blender or food processor. Blend until smooth and well combined. If you prefer some texture from the onion, you can finely mince it instead of blending. Ensure all ingredients are thoroughly mixed to create a creamy dressing.
Step 3
Once the cabbage has been salted and softened slightly, take handfuls and squeeze out as much moisture as possible. Removing excess water is crucial to prevent the slaw from becoming watery and to ensure it absorbs the dressing flavors well. Be careful not to squeeze too forcefully, as this could diminish the cabbage’s crunch.
Step 4
Add the blended dressing to the squeezed cabbage and carrot shreds. Gently toss everything together to ensure the dressing coats all the vegetables evenly. Taste and adjust seasoning if needed, adding a little more soy sauce or vinegar according to your preference.
Step 5
Transfer the finished cabbage slaw to an airtight container and store it in the refrigerator. While it’s delicious served immediately, letting it chill for about 30 minutes in the refrigerator allows the flavors to meld beautifully. This slaw is perfect as a refreshing side dish or as a filling for sandwiches.
