Porridge Ingredients

  • 1 cup soaked rice (approx. 200g)
  • 3 dried anchovies (for broth, diphry)
  • 4 peeled dried shrimp (or fresh shrimp)

Seasoning & Broth

  • 1 Tbsp all-purpose soy sauce (or soup soy sauce)
  • 1 Tbsp savory soybean paste (doenjang)
  • 1/2 Tbsp minced garlic
  • 2 Tbsp sesame oil
  • 1 liter water (approx. 5 cups)
  • Pinch of toasted sesame seeds (for garnish)

Cooking Instructions

1. Prepare the Mallow: Mallow has a unique preparation method compared to other vegetables. Wash it thoroughly under running water, then gently knead the leaves as if you were washing laundry. Be careful not to knead too vigorously, as this can impart a raw taste; moderate kneading is key. This process reduces the mallow’s bitterness and softens its texture.

2. Chop the Mallow: Once prepared, chop the mallow into bite-sized pieces, about 2-3 cm in length. Avoid chopping too finely, as it might disintegrate in the porridge.

3. Prepare for Stir-frying Rice: Heat 2 tablespoons of sesame oil in a pot over medium heat.
