Main Ingredients

  • 2 imitation crab sticks
  • 1/4 cucumber
  • 2 sheets of nori (seaweed)
  • A pinch of sesame oil

Sushi Seasoning & Rice

  • 1 Tbsp rice vinegar
  • 1 Tbsp water
  • A pinch of salt
  • 0.5 Tbsp sugar
  • A pinch of sesame seeds
  • 1.5 cups cooked rice (warm)
  • 1 egg

Cooking Instructions

First, prepare the cucumber. Cut the cucumber into strips roughly the same length as the imitation crab sticks and then into quarters. Carefully scoop out the seeds. Lightly sprinkle the seeded parts with salt. Cut each crab stick in half.

Next, we’ll coat the crab sticks in egg and pan-fry them. Adding just a tiny pinch of salt to the egg wash helps to eliminate any eggy odor, making them more delicious. Dip the prepared crab sticks into the egg mixture and pan-fry them until golden brown on both sides.

Let’s make the sushi rice seasoning. To make a traditional sushi vinegar mixture, you’d typically boil the ingredients, but if you enjoy a tangier flavor, you can skip boiling and mix them directly. I mixed 1 Tbsp rice vinegar, 0.5 Tbsp sugar, 1 Tbsp water, and a pinch of salt to create the sushi vinegar. Then, I gently combined this with 1.5 cups of warm cooked rice and a pinch of sesame seeds. The key is to mix gently with a spatula, as if separating the rice grains, to avoid mashing the rice.

Now it’s time to assemble and roll the sushi. Cut the nori sheets in half. Lightly brush both sides of the nori with sesame oil for added flavor. Spread about one-third of the nori with the seasoned rice. Arrange the prepared cucumber and crab stick pieces neatly on top. Then, using a silicone sushi mat, tightly but gently roll the sushi from the bottom up. The silicone mat will help ensure the sushi rolls are formed neatly without breaking. Slice the finished sushi rolls into bite-sized pieces and enjoy!
