Stir-Fried King Oyster Mushrooms

These mushrooms are wonderfully chewy and packed with natural flavor, enhanced by simple seasonings like sea salt and perilla oil. This dish is clean, satisfyingly textured, and incredibly delicious. Ingredients- 240g King Oyster Mushrooms
- 1/2 Onion
- A small bunch of Chives
- 1/3 Red Chili Pepper
- 3 cloves Garlic
- 2 Tbsp Perilla Oil (or Sesame Oil)
- Sea Salt, to taste
- A pinch of Sesame Seeds
Cooking Instructions
Step 1
First, wash the king oyster mushrooms thoroughly. Then, slice them into bite-sized pieces, about 1cm thick. Slicing them too thinly can make them mushy when cooked, so aim for a moderate thickness to ensure a pleasant chewiness.
Step 2
Peel and wash the onion, then slice it into approximately 0.5cm thick strips. Peel the garlic cloves and slice them thinly. Remove the stems from the red chili pepper, wash it, and finely chop it. Lastly, wash the chives under running water, trim off any wilted outer leaves, and cut them into roughly 3-4cm lengths.
Step 3
Now, let’s start stir-frying. Heat a frying pan over medium heat and add 2 tablespoons of fragrant perilla oil. First, add the sliced onion and garlic, and stir-fry until they become fragrant. Once the onion starts to turn translucent, add the sliced king oyster mushrooms. Continue to stir-fry together until the mushrooms soften and release some of their moisture. Cooking over medium heat, rather than high heat, will prevent the mushrooms from burning and ensure they cook perfectly.
Step 4
When the mushrooms are cooked to your liking, add the chopped red chili pepper and chives. Stir-fry quickly, just until the chives are slightly wilted. Be careful not to overcook, as this will make the chives lose their crispness. Finally, season with sea salt to your taste, adding it gradually as you check. Just before removing from the heat, sprinkle with a pinch of sesame seeds for an extra nutty flavor. Your delicious Stir-Fried King Oyster Mushrooms are now ready!
