These tuna mayo rice balls were made at my daughter’s request. Instead of filling the rice balls with tuna mayo, she asked for them to be mixed together with the rice. I remember making simple rice balls for the kids’ lunch during their school breaks when they were younger. Now, for my daughter, who has become an adult, I’ve made these Cheongyang Mayo Tuna Rice Balls.

Ingredients

  • 1 can (150g) tuna
  • 3 Cheongyang peppers (Korean chili peppers)
  • 3 Tbsp Tofu Mayonnaise
  • Pinch of salt
  • Pinch of pepper
  • 1.5 bowls of brown rice
  • 1 Tbsp toasted sesame seeds

Open the 150g can of tuna and drain all the oil by pressing it with your hand while it’s in a sieve. This step is crucial for a less greasy and cleaner flavor profile in your rice balls.

Place the drained tuna in a mixing bowl. Finely mince the 3 Cheongyang peppers and add them to the tuna. If you enjoy more heat, you can increase the amount of peppers or remove the seeds for a milder kick.

Now, let’s season the mixture. Add 3 tablespoons of Tofu Mayonnaise. Season with a pinch of salt and pepper to taste. (Pro tip: Tofu mayonnaise is easy to make at home! Drain a block of tofu thoroughly, then blend it in a mixer with olive oil, vinegar, and salt until smooth.)
