  • 4 sheets of aged kimchi, cut into bite-sized pieces
  • 1/2 green onion, thinly sliced
  • 1 tsp minced garlic
  • 4 cups water (approx. 800ml)
  • 1 packet ramen noodles (use without seasoning packet, or adjust seasoning if using regular ramen)

First, pour 4 cups of water into a pot. Add the cut aged kimchi and sliced green onion, along with 1 tsp of minced garlic. Bring to a boil over high heat. For one serving, about 4 sheets of aged kimchi are sufficient. It’s important to let it boil sufficiently for the kimchi’s flavor to infuse into the broth.

Once the water with kimchi and green onion starts boiling, reduce the heat to medium and simmer for about 5-7 more minutes, allowing the kimchi flavor to fully develop in the broth. To make the broth even more refreshing and deeper in flavor, you can add a bit of natural seasoning. A splash of fish sauce or soy sauce can also enhance the taste.

When the broth has a refreshing and rich flavor, it’s time to add the ramen noodles. If you’re using noodles without a seasoning packet, just add them and cook. If you’re using regular ramen, be aware that aged kimchi is already salty. Adding the full seasoning packet might make it too salty. Therefore, it’s recommended to use only half the packet or omit it entirely and rely on the kimchi broth for flavor.

Also, lifting the noodles with chopsticks and letting them air out briefly will make them chewier and more springy. Once the noodles are cooked to your liking, turn off the heat and enjoy!
