Step 1
First, peel the potatoes thoroughly. Then, cut them into bite-sized cubes, about 2cm (or roughly 3/4 inch) in size. Cubes that are too small can break apart during cooking, while cubes that are too large will take a long time to cook through, so aim for a consistent, medium size.

Bring a pot of water to a rolling boil. Once the water is boiling, carefully add the cubed potatoes and boil for exactly 2 minutes. This short boiling time will partially cook the potatoes, making them tender inside without becoming mushy.

Drain the boiled potatoes thoroughly in a colander. It’s crucial to remove as much moisture as possible; you can gently pat them dry with paper towels. Excess water can cause the oil to splatter dangerously when frying and will prevent the potatoes from becoming crispy.
