Cooking Instructions
Step 1
First, gather your ingredients: 150g of cabbage, one 100g can of tuna, one fresh egg, and one bowl of warm rice. Having everything prepped will make the cooking process much smoother.
Step 2
Wash the cabbage thoroughly and pat it dry. Then, thinly slice it into strips, about 0.5cm thick. Avoid slicing it too thick, as it might take longer to cook. Aim for a thickness slightly thicker than what you’d use for coleslaw.
Step 3
Heat the oil from the canned tuna in a frying pan over medium heat. This tuna oil is great to use instead of regular cooking oil because it contains canola oil, purified water, and vegetable extract, adding a wonderful flavor to your dish.
Step 4
Add the sliced cabbage to the pan and stir-fry until it becomes slightly wilted, about halfway cooked. This process will bring out the natural sweetness of the cabbage.
Step 5
Once the cabbage is tenderized, drain the tuna and add it to the pan. Pour in 1 tablespoon of oyster sauce and 1 tablespoon of fish sauce. Stir-fry everything together for about 1 minute, allowing the flavors to meld beautifully.

Make a small well in the center of the cabbage and tuna mixture and crack the egg into it. Cover the pan with a lid and cook over low heat until the egg white is set and the yolk is still runny. A slightly undercooked yolk will create a delicious sauce when mixed.

Serve the warm rice in a bowl. Spoon the cooked cabbage and tuna mixture over the rice. Sprinkle a pinch of fresh black pepper and drizzle with 0.5 tablespoon of sesame oil. Break the egg yolk and mix everything together for a delightful and flavorful meal!
