Ingredients

  • 1 packet (80g) curry powder
  • 2 ripe tomatoes
  • 2 medium potatoes
  • 2 medium onions
  • 20g butter
  • 2.5-3 cups water (adjust to your preference)

Cooking Instructions

Step 1

First, wash all your vegetables. Peel and dice the tomatoes and potatoes into 2cm cubes. Finely slice one of the onions and dice the other onion into 2cm cubes. Slicing one onion will add a wonderful depth of flavor to your curry.

Step 1

Step 2

Melt the butter in a deep pot over medium-low heat. Add the thinly sliced onions and sauté them slowly. It’s crucial to cook the onions until they turn a deep brown and become very soft and almost translucent, not just lightly coated. This caramelization step is key to developing the rich flavor of the vegetable curry.

Step 2

Step 3

Once the onions are nicely caramelized and fragrant, add the diced potatoes and the remaining diced onion to the pot. Stir and cook for about 1-2 minutes, allowing the vegetables to get lightly coated with the butter and onion mixture. This helps them absorb the flavors.

Step 3

Step 4

Pour 2.5 cups of water into the pot with the sautéed vegetables. If you prefer a thinner curry, you can add up to 3 cups. Adjust the water amount according to your taste. Bring it to a boil over high heat, then reduce to medium-low and simmer for about 10-15 minutes, or until the vegetables are tender.

Step 4

Step 5

Check if the potatoes and vegetables are tender by piercing them with a fork. Once cooked, sprinkle in the curry powder (80g or 1 packet). Use a whisk or spatula to stir thoroughly and dissolve the powder, ensuring there are no lumps. Continue to simmer over medium-low heat for about 5 more minutes until the curry thickens to your desired consistency. Your delicious Tomato Vegetable Curry is now ready!
