Main Ingredients

  • Maesaengi (Korean seaweed) 1 bundle (about 1 handful)
  • Oysters 1 pack (approx. 200g)
  • Kelp broth 5 cups (approx. 1L)

Seasoning & Aromatics

  • Sesame oil 1 Tbsp
  • Soup soy sauce 1 Tbsp
  • Salt to taste (adjust as needed)
  • Minced garlic 1/2 tsp

Cooking Instructions

Gently wash the Maesaengi in cold water to preserve its delicate texture. To prevent losing the seaweed into the water, it’s best to place it in a fine-mesh sieve from the start and shake it clean. This method ensures you wash it without losing any precious bits.

Drain the washed Maesaengi lightly in the sieve. Avoid draining for too long, as it might clump together. Just a gentle drain is sufficient.

To remove any fishy smell from the fresh oysters, place them in a bowl, add a little saltwater, and gently swish them around. Rinse them once or twice under cold running water. Drain them in a sieve.

The secret to a deep and refreshing broth! Prepare the kelp broth. In a pot, add 5 cups of water (about 1L), a piece of kelp about the size of your palm, and a few dried anchovies. Boil for about 10 minutes. Remove the anchovies and kelp, and use only the broth.

Pour the prepared kelp broth into a pot and bring to a simmer over medium heat. Add 1 Tbsp of soup soy sauce for initial seasoning. Once the broth is boiling, add the Maesaengi, rinsed oysters, and minced garlic. Continue to simmer until the oysters are cooked and plump.
