A Side Dish for My Daughter: Soft and Delicious Braised Pork Ribs
My daughter, who is on a late vacation and hasn’t been home in a while, wanted this dish, so I made it for her. It’s a tender braised pork ribs recipe.

Step 1
First, prepare the vegetables that will add flavor to the braised ribs. Finely mince the garlic. Peel and core the apple and pear, then cut them into manageable pieces. Peel and roughly chop the onion.

Prepare the aromatics to remove any gaminess from the ribs while boiling. Fill a pot with plenty of water, add the 3 bay leaves and 1/2 teaspoon of whole peppercorns, and bring the water to a boil.
Step 3
Once the water is boiling, add the prepared pork ribs and blanch them for about 5-7 minutes. This parboiling step helps remove impurities and excess fat, resulting in a cleaner and more tender taste. After blanching, rinse the ribs thoroughly under cold water to remove any remaining grease.
Step 4
Now, let’s make the delicious sauce that will define the taste of your braised ribs. Place the prepared apple, pear, and onion into a blender and blend until smooth. In a bowl, combine the fruit and vegetable puree with 8 tablespoons of soy sauce, 4 tablespoons of rice syrup (you can add a little more if you prefer it sweeter), 6 tablespoons of mirin, 2 tablespoons of minced garlic, and a pinch of black pepper. Whisk everything together until well combined to create the seasoning sauce. Adjust the sweetness and saltiness to your preference by adding more soy sauce or rice syrup.

Pour the prepared sauce into a wide pot or pan. Add the blanched and rinsed pork ribs. Mix well to ensure the ribs are evenly coated with the sauce. Cover the pot and simmer over medium heat for about 20-30 minutes, or until the sauce has thickened to a glaze. Stir occasionally to prevent sticking. Once the sauce is rich and coats the ribs beautifully, your tender and flavorful braised pork ribs are ready to serve. Enjoy this delicious dish with a side of warm rice!
