  • 1 Tbsp Brown Rice Vinegar
  • 0.5 Tbsp Coarse Sea Salt
  • 1 Tsp Toasted Sesame Seeds
  • Small bunch of Scallions or Green Onion (about 1/2 stalk)
  • 2 cloves Garlic
  • 1 Tsp Apple Enzyme (or sugar/honey)

First, wash the carrot thoroughly under running water. You can peel it lightly with a peeler or a knife, or even leave the skin on if it’s clean. Peel the garlic and wash the scallions.

Finely mince the peeled garlic. Slice the scallions thinly on an angle to add a fresh aroma. If using young green onions, you can also chop them finely.

Now it’s time to shred the carrot. For the best texture in the salad, shred the carrot thinly and evenly using a knife or a shredding tool.

Place the shredded carrots in a bowl and add 0.5 tablespoon of coarse sea salt. Let the carrots sit for about 10 minutes to soften slightly while retaining their crispness. Stir them once or twice during this time to ensure even salting.
