Main Ingredients- 500g fresh soybean sprouts
- 10cm white part of a leek
Seasoning Ingredients- 1 Tbsp minced garlic
- 1 tsp salt (or to taste)
- 2/3 tsp beef-flavored bouillon powder (adds umami)
- 2 Tbsp gochugaru (Korean chili flakes, for color and spice)
- 1 Tbsp fish sauce (preferably anchovy sauce, for depth of flavor)
- 1 Tbsp sesame oil (for nutty aroma)
- Sesame seeds (for garnish)
- 1 Tbsp minced garlic

Cooking Instructions
Step 1
Rinse the 500g of soybean sprouts thoroughly under cold water. Place them in a pot with 1 cup (200ml) of water. Cover the pot tightly with a lid and cook over high heat for exactly 6 minutes. (Be mindful that cooking time can affect the crunchiness; avoid opening the lid during cooking, as it can release steam and lead to a less crisp texture and potential beany odor.)
Step 2
Prepare the leek by taking about 10cm of the white part. Slice it in half lengthwise, then thinly julienne it into fine strips.
Step 3
Once the bean sprouts are cooked, immediately transfer them to a bowl of cold water to stop the cooking process and cool them down. This step is crucial for maintaining their crispness. Drain them well in a colander, ensuring all excess water is removed. Excess water can dilute the seasoning.
Step 4
Transfer the drained bean sprouts to a mixing bowl. Add all the prepared seasoning ingredients (minced garlic, salt, beef bouillon powder, gochugaru, and fish sauce) along with the julienned leek. Gently toss and mix everything together, taking care not to mash the bean sprouts. Using your hands to gently mix ensures the seasoning is evenly distributed and flavorful.
Step 5
Once the bean sprouts are evenly coated with the vibrant red seasoning, add 1 tablespoon of sesame oil and a sprinkle of sesame seeds. Toss gently one more time to combine. Your delicious spicy seasoned bean sprouts are now ready to serve! They are great served immediately or chilled.
