Nutritious Perilla Leaf Rice Rolls

Ingredients- 15 fresh perilla leaves
- 1/2 block firm tofu
- 1 can (drained) tuna
- 1 Tbsp ssamjang (Korean soybean paste)
- 1 Tbsp doenjang (Korean fermented soybean paste)
- 1 Tbsp minced garlic
- 1 Tbsp sesame oil
- A pinch of black pepper
- 1 Tbsp sesame seeds
Cooking Instructions
Step 1
Bring a pot of water to a rolling boil. Add all 15 perilla leaves at once and blanch for just 3 seconds. Immediately remove them and rinse under cold water. Be careful not to over-blanch, as this can turn the leaves black. This quick blanching keeps the leaves fresh and tender.
Step 2
In a large bowl, combine the drained tofu (press out excess water), drained tuna, cooked rice, ssamjang, doenjang, minced garlic, sesame oil, pepper, and sesame seeds. Mix everything thoroughly until well combined.
Step 3
Gently knead and mix the ingredients with your hands until they form a cohesive filling. The goal is to mash the tofu slightly while keeping the rice grains intact, ensuring all flavors are evenly distributed. This step is key to a good texture.
Step 4
Take small portions of the filling and shape them into bite-sized balls. Aim for a size that fits comfortably in your mouth.
Step 5
Lay a blanched perilla leaf flat. Place one of the filling balls in the center and carefully wrap the leaf around it, gathering the edges to form a neat parcel.
Step 6
Continue wrapping the filling in the perilla leaves until all the filling is used up. Shape them into neat, round bundles. These are your perilla leaf rice rolls, ready to be enjoyed!
