Main Ingredients- 200g fresh oysters
- 1 large green onion (about 15cm long)
- 2 shiitake mushrooms
- 1 Korean green chili pepper (cheongyang)
- 1 red chili pepper
- 100g Korean radish (mu)
- 1/2 block firm tofu (about 150g)
Broth Ingredients- 4 cups water (800ml)
Seasoning Ingredients- 1/2 Tbsp minced garlic
- 1 Tbsp Korean soy sauce for soup (guk-ganjang)
- 1/2 Tbsp salted shrimp (saeujeot), with some brine

Cooking Instructions
Step 1
Prepare all your vegetables. Thinly slice the Korean radish (mu) into half-moon shapes, about 0.5cm thick. Cut the tofu into bite-sized cubes, approximately 2cm. Slice the shiitake mushrooms about 0.3cm thick. Thinly slice the green onion and chili peppers diagonally. These will add a wonderful aroma and vibrant colors to your soup.
Step 2
To ensure the best flavor from your fresh oysters, it’s important to clean them properly. In a bowl, combine 3 cups of water and 1/2 Tbsp of salt, stirring to dissolve. Add the oysters and gently shake the bowl to wash them. This process removes any surface impurities for a cleaner taste. Drain the oysters well using a colander.
Step 3
Let’s start building the flavorful broth for your soup. Pour 4 cups of water into a pot. Add the sliced radish and shiitake mushrooms. Bring to a boil over high heat. Cook until the radish becomes translucent and the mushrooms release their earthy aroma.
Step 4
Once the broth is at a rolling boil, add the cleaned oysters and all the seasoning ingredients (minced garlic, Korean soy sauce for soup, and salted shrimp). Using salted shrimp will enhance the natural sweetness of the oysters and add a deep, savory umami flavor. Be careful not to overcook the oysters once added, as they can become tough.
Step 5
When the oysters turn opaque and are cooked through, add the sliced green onions, chili peppers, and tofu to the pot. Let the soup simmer for another 1-2 minutes, allowing the flavors to meld and the tofu to warm through. Your delicious Oyster and Tofu Soup is ready to be enjoyed piping hot!
