A Quick and Easy Tofu Bean Sprout Soup Perfect for Busy Mornings
As the weather turns colder, I find myself craving hearty soup dishes more often. It feels like a comforting soup or stew is a must-have on the table, perhaps to fortify us against the chill and power through the start of a new day. Is this a bit old-fashioned? Perhaps, but I believe many mothers feel the same! This year, I feel it even more strongly as my sons have started their careers and head out to work daily; I want to ensure they have nourishing meals. Beyond that, the ongoing concerns about COVID-19 also make me more mindful of health and well-being. With our kimchi stash from the recent harvest, a simple bowl of soup is often all that’s needed for a satisfying meal. So, I’ve made a simple Tofu Bean Sprout Soup. It’s incredibly easy to prepare, but the taste is absolutely divine! Seeing my sons enjoy a bowl of this soup with rice and kimchi before heading out in the morning fills me with gratitude. This warm, comforting soup is perfect for a quick and delicious breakfast. Enjoy this flavorful soup, and remember to take care of your health!
Soup Ingredients- 3 handfuls of fresh bean sprouts (about 200g)
- 1.5 liters of water
- 6 sheets of fried tofu (cut into bite-sized pieces)
Seasonings- 1 tsp beef-flavored bouillon powder (like Dasida)
- Salted fermented shrimp (saeujeot), to taste
- 1 tsp minced garlic
- Chopped green onions, for garnish

Cooking Instructions
Step 1
Pour 1.5 liters of water into a pot and bring it to a boil over high heat.
Step 2
Once the water is boiling vigorously, add the 3 handfuls of thoroughly washed bean sprouts. Cover the pot and let them cook for about 3-4 minutes to prevent any raw bean sprout smell.
Step 3
When the bean sprouts are tender, add the 6 sheets of fried tofu, cut into bite-sized pieces. Continue to simmer for another 1-2 minutes.
Step 4
Now, it’s time to season the soup. Add 1 teaspoon of beef-flavored bouillon powder and 1 teaspoon of minced garlic. Adjust the saltiness to your preference using salted fermented shrimp (saeujeot). It’s best to add the saeujeot gradually, tasting as you go.
Step 5
Finally, add the chopped green onions and let the soup simmer for another minute, allowing the flavors to meld.
Step 6
Your warm Tofu and Bean Sprout Soup is ready! Ladle it into bowls for a delicious breakfast that pairs wonderfully with a bowl of rice. Start your day feeling nourished and satisfied with this comforting soup.
