Delicious Stir-Fried Zucchini Salad: Fresh Like a Quick Pickle!
Simple and Tasty Zucchini Side Dish Recipe: A Perfect Way to Use Seasonal Zucchini

Discover a delightful zucchini salad recipe, perfect for enjoying zucchini when it’s in season and affordable. You can prepare it similarly to eggplant, by pan-grilling it until golden brown and then tossing it with a savory dressing. This method ensures the zucchini remains firm and doesn’t release excess water, making it a wholesome and delicious side dish for any meal. Especially during the warmer summer months, grilled round zucchini offers a unique twist, being more voluminous and incredibly tender. You can grill it to be slightly crisp or, as shown here, to a softer texture that children will love. One zucchini is just the right amount for a single meal’s side dish. If you’re tired of stir-fried zucchini, definitely try this grilled and seasoned version! Enjoy your delicious meal. Thank you.
Ingredients- 1 Zucchini
- A little cooking oil
Seasoning (Measurements: Tbsp)- 1 Tbsp Soy sauce
- 0.5 Tbsp Sugar
- 0.5 Tbsp Minced garlic
- 1 Tbsp Toasted sesame seeds
- 1 Tbsp Soy sauce
- 0.5 Tbsp Sugar
- 0.5 Tbsp Minced garlic
- 1 Tbsp Toasted sesame seeds
Cooking Instructions
Step 1
Slice the zucchini. You can cut it into rounds or half-moons, depending on your preference. For this recipe, I’m cutting it into rounds as half-moons might be trickier to grill all at once. Aim for a thickness of about 0.5 cm, not too thin.

Step 2
Lightly grease a heated pan with cooking oil. Place the round zucchini slices onto the pan and grill them over medium heat until they turn golden brown on both sides. Keep an eye on the heat to prevent burning.

Step 3
Once the zucchini slices are beautifully golden brown on both sides, your salad is almost ready! Grilling brings out the natural sweetness of the zucchini and significantly improves its texture.

Step 4
Transfer all the grilled zucchini to a large bowl. Add 0.5 tablespoon of minced garlic. The aromatic garlic will beautifully complement the zucchini.

Step 5
Next, add 0.5 tablespoon of sugar, 1 tablespoon of soy sauce for savory depth, and 1 tablespoon of toasted sesame seeds for a nutty aroma. The sugar enhances the zucchini’s natural sweetness, creating a well-rounded flavor.

Step 6
Now, gently toss the zucchini with the seasonings until everything is well combined. Be careful not to overmix, as this could make the zucchini mushy. This simple seasoning creates a delicious zucchini salad, perfect as a side dish for your meal!
