This clear bean sprout soup is incredibly delicious, featuring a refreshing and rich broth made with anchovy stock! Perfect for a light and satisfying meal.
Main Ingredients- 250g fresh soybean sprouts
- 1 piece of radish (approx. 2cm thick)
- 1 handful of dried anchovies for broth (about 10-15 fish)
- 1.5 liters water
Seasoning- 3 Tbsp anchovy sauce
- 2 Tbsp sesame oil
- 1 Tbsp minced garlic

Cooking Instructions
Step 1
First, rinse the soybean sprouts thoroughly under running water. Remove any bad parts or hulls for a cleaner soup. Drain them and set aside.
Step 2
Prepare the radish by cutting a 2cm thick piece into thin julienne strips. The julienned radish will add a refreshing flavor to the broth.
Step 3
In a deep pot, add the julienned radish and the rinsed soybean sprouts. Add 3 Tbsp of anchovy sauce and 2 Tbsp of sesame oil. Stir-fry over high heat until all ingredients are well combined. Sauté until the sprouts slightly wilt and the radish becomes translucent; this step enhances the savory depth.
Step 4
Pour in 1.5 liters of water and add the handful of dried anchovies to the pot with the sautéed vegetables. Bring to a boil over high heat. It’s best to boil with the lid off to prevent any fishy smell from accumulating.
Step 5
Once the soup comes to a rolling boil, skim off any foam or impurities that rise to the surface. This ensures a clear and rich anchovy broth. When the savory aroma fills the air, add 1 Tbsp of minced garlic and let it simmer for a little longer. Taste and adjust seasoning with more salt or anchovy sauce if needed.
