  • 55g Fresh Blueberries
  • 200g Pancake Mix
  • 40g Cold Unsalted Butter
  • 10ml Cold Milk

First, wash the prepared blueberries and pat them dry. If the blueberries are large, cut them in half. This will help them distribute evenly in the batter and create a prettier shape.

In a large bowl, add 200g of pancake mix. Add 40g of cold unsalted butter, cut into small cubes. Then, add the 55g of prepared blueberries.

Using a scraper or your fingertips, gently mix the ingredients in the bowl. Break down the butter into small pieces, about the size of peas, while ensuring not to overmix. The goal is to coat the flour and blueberries with the butter. Overmixing will melt the butter and result in tough scones, so mix only until the mixture resembles coarse crumbs.

Gather the mixture with a scraper to form a dough. Gently separate it into portions and shape them into your desired scone form. You can make them round and flat, or cut them into wedges. Place a single blueberry on top of each shaped scone for decoration. Lightly brush the tops with 10ml of cold milk using a pastry brush; this will give them a lovely golden-brown color when baked.

Line your air fryer basket with parchment paper or lightly grease it. Place the shaped scones in the basket. Bake in a preheated air fryer at 180°C (350°F) for about 9 minutes, or until golden brown. Baking times can vary slightly depending on your air fryer model, so it’s a good idea to check them periodically. They are best enjoyed warm right out of the air fryer!
