Easy and Delicious Chicken Breast Curry Fried Rice
A special recipe for chicken breast that you won’t get tired of! Perfect for a satisfying meal.
Main Ingredients- 1 piece cooked chicken breast (store-bought recommended)
- 1/4 green bell pepper
- 1/4 red bell pepper
- 1/8 onion
- 1/2 king oyster mushroom
- 1 pineapple ring
- 1 bowl of rice (warm)
- 1 tsp curry powder

Cooking Instructions
Step 1
Prepare the ingredients that will go into your fried rice. We have cooked chicken breast (store-bought is convenient!), green and red bell peppers, pineapple, king oyster mushrooms, and onion. If you have other vegetables like zucchini or any other leftover veggies at home, feel free to add them too! Chop all the vegetables into bite-sized pieces so they mix well into the fried rice.
Step 2
The chicken breast used in this recipe is pre-cooked, so I’ve cut it into large chunks. If you are using raw chicken breast, cut it into your desired size after this step. For all other vegetables, it’s best to dice them finely so they blend harmoniously into the fried rice. The pineapple will add a lovely sweet and tangy flavor and a pleasant texture, so don’t skip it!
Step 3
Heat 1 tablespoon of cooking oil in a pan over medium-high heat. Add the diced onion and king oyster mushrooms and sauté until fragrant. Next, add the cooked chicken breast and pineapple chunks and stir-fry them together. Important tip: If you’re using raw chicken breast, sauté the onion first, then add the raw chicken and cook until it’s fully done before adding the pineapple and mushrooms.
Step 4
Add the warm rice to the pan. Use your spatula to break up any clumps of rice and ‘cut’ through the grains as you stir-fry. The goal is to have each grain of rice separated and well-coated with the other ingredients.
Step 5
Sprinkle in 1 teaspoon of curry powder. This amount will give a subtle curry aroma and a delicious umami flavor without being overpowering. Stir well to distribute the curry powder evenly throughout the rice. Season with a pinch of salt to taste, adjusting as needed. A little black pepper can also be added if you like.
Step 6
Finally, add the chopped green and red bell peppers. Stir-fry for just a minute or two until they are slightly tender but still retain their crispness. Overcooking the bell peppers will make them mushy, so a quick stir-fry is key to preserving their vibrant color and satisfying crunch.
