Main Ingredients- 1 can (200g) Spam
- 1/4 head (approx. 300g) well-fermented kimchi
- 1/2 stalk green onion
Cooking Instructions
Step 1
First, chop the kimchi into bite-sized pieces, about 2-3 cm long. Place all the chopped kimchi into a pot.
Step 2
Slice the green onion diagonally into about 1 cm pieces or chop them finely. We’ll add this later.
Step 3
Open the Spam can and remove the Spam. Briefly blanch it in boiling water for 1-2 minutes. This step helps to remove excess grease and slightly mellow the saltiness, resulting in a cleaner flavor. Once blanched, cut the Spam into bite-sized pieces, about 1-1.5 cm thick.
Step 4
Add the sliced Spam to the pot with the kimchi. Pour in 600ml of water. Finally, sprinkle in a pinch of black pepper to enhance the aroma and reduce any porky smell.
Step 5
Now, bring the stew to a boil over high heat. Once it starts boiling, reduce the heat to medium and let it simmer gently (뽀글뽀글). Cook for about 5-7 minutes, or until the kimchi is tender and the flavors have melded.
Step 6
Once the stew has developed a good flavor, add 1 tablespoon of minced garlic. Season with fish sauce to taste. Adjust the amount of fish sauce based on the saltiness of your kimchi. If it’s not salty enough, you can add a little salt or soy sauce.

Finally, add the prepared green onions generously and let it simmer for another minute. Your delicious Spam Kimchi Stew is ready! It’s incredibly satisfying served over a bowl of hot rice.
