Transform your leftover cooked potatoes, onions, and broccoli into a delightful ‘Rustic Potato Medley’! This simple dish combines the creaminess of melted cheese with tender potatoes and vegetables, making it a perfect quick meal or a fantastic side dish.
Main Ingredients- 2 medium potatoes
- 1/2 cup blanched broccoli florets
- 1/2 onion
- 1 slice cheddar cheese
- 6 cloves garlic

Step 1
Let’s start by preparing our ingredients. Scrub the 2 medium potatoes thoroughly, even with their skins on. Place them in a microwave-safe dish with a little water, cover with plastic wrap, and microwave for about 8 minutes, or until tender. Once cooked, let them cool slightly, then slice them into half-moon shapes. Thinly slice the half onion and the garlic cloves.
Step 2
Heat 2 tablespoons of olive oil in a pan over medium-low heat. Add the thinly sliced garlic and sauté gently, infusing the oil with its aroma. Cook until the garlic turns translucent, being careful not to burn it. This slow sauté will extract the best garlic flavor without bitterness.

Once the garlic is fragrant and translucent, add the sliced onion to the pan. Sauté the onions with the garlic until they become slightly softened and translucent, releasing their natural sweetness.

Now, add the cooked potatoes and blanched broccoli florets to the pan. Season everything with 0.5 tablespoon of salt and a pinch of black pepper. Gently toss to combine all the ingredients, ensuring they are evenly coated with the seasonings.

Carefully stir the mixture, trying not to break up the potatoes. Increase the heat slightly and sauté for another 1-2 minutes. Keep an eye on it to prevent burning. Alternatively, you can use a microwave. Place the plate in the microwave and heat for 2-3 minutes, just until the cheese is melted and gooey. While the microwave won’t brown the cheese like an oven, it achieves a wonderfully melted texture.
