Salad Ingredients

  • 30 cherry tomatoes
  • 1/2 onion
  • A little bell pepper (use various colors for visual appeal)
  • 1 handful baby greens
  • 1 handful almonds (or your favorite nuts)

Marinade Dressing

  • 3 Tbsp balsamic vinegar
  • 2 Tbsp olive oil
  • Pinch of salt
  • Pinch of black pepper
  • 1 Tbsp oligosaccharide (adjust sweetness)
  • 1/2 tsp dried basil

Cooking Instructions

First, wash the cherry tomatoes thoroughly and remove their stems. Then, using a serrated knife (like a bread knife), make a shallow cross-shaped cut at the top of each tomato. This step will make peeling much easier.

Bring a pot of water to a rolling boil. Carefully add the cherry tomatoes with the cuts and blanch them for about 10-20 seconds, just until the skins start to loosen. Immediately transfer them to a bowl of ice-cold water to stop the cooking and cool them down. Once cooled, gently peel the skins starting from the cut. Drain the peeled tomatoes lightly.

Finely slice or mince the onion. Dice the bell pepper into small pieces. In a bowl, combine the balsamic vinegar, olive oil, salt, black pepper, oligosaccharide, and dried basil. Whisk everything together to create a flavorful marinade dressing. Feel free to adjust the sweetness by adding more or less oligosaccharide.
