Main Ingredients- 1/2 head of aged kimchi (muk-kimchi)

Step 1
First, gently rinse the aged kimchi under running water to lightly wash off excess saltiness from the outer leaves. Be careful not to wash too vigorously, as this can diminish the kimchi’s flavor. Once rinsed, cut the kimchi into bite-sized pieces, about 2-3 cm. If your kimchi is particularly salty, be sure to squeeze out any excess water after rinsing.
Step 2
In a large bowl, combine the cut aged kimchi with all the seasoning ingredients. Gently mix everything together. Add 1 tablespoon of sugar for a touch of sweetness, 1 tablespoon of minced garlic for aromatic depth, and a generous amount of perilla oil and 1 tablespoon of toasted sesame seeds for a rich, nutty flavor. Finely chop the green onions and add them to the bowl, mixing thoroughly. It’s important to use your hands to gently combine the ingredients, ensuring everything is well incorporated. If your kimchi is very sour, feel free to increase the sugar slightly.
Step 3
Transfer the well-seasoned aged kimchi into a microwave-safe dish. Cover with plastic wrap or a lid, leaving it slightly ajar, and microwave for 3 to 4 minutes. Once the kimchi is heated through and the flavors have melded, your delicious steamed aged kimchi is ready! For an extra touch of flavor, you can garnish with more chopped green onions or a drizzle of sesame oil.
