Main Ingredients

  • 1 medium eggplant

Simple Seasoning Sauce

  • 1 Tbsp soy sauce
  • 1 Tbsp plum extract (maesilcheong)
  • 1 tsp minced garlic
  • 1 tsp red pepper flakes
  • 1 tsp sesame seeds

Cooking Instructions

Step 1

First, wash the eggplant thoroughly. Cut the eggplant in half lengthwise, then slice it into bite-sized pieces (about 2-3 cm thick). Arrange the sliced eggplant neatly in a steamer basket. Steam over medium heat for about 3 to 5 minutes. I prefer a slightly firmer texture, so I steamed mine for 3 minutes. If you like your eggplant very soft, steam it for up to 5 minutes. You can check for doneness by piercing the eggplant with a chopstick; it should be tender.

Step 2

While the eggplant is steaming, let’s prepare the flavorful sauce. In a small bowl, combine 1 tablespoon of soy sauce, 1 tablespoon of plum extract, 1 teaspoon of minced garlic, 1 teaspoon of red pepper flakes, and 1 teaspoon of sesame seeds for added nuttiness. Mix everything well. (Note: This sauce recipe is portioned to generously season about 3 eggplants. Leftover sauce can be stored in an airtight container in the refrigerator for future use in this dish or other recipes.)

Step 3

Carefully transfer the steamed eggplant to a serving plate. Be mindful as it will be hot. Now, simply drizzle the prepared seasoning sauce over the eggplant. Your super simple steamed eggplant is ready! Isn’t that easy? For an extra touch, you can garnish with chopped green onions or more sesame seeds. Don’t worry about the leftover sauce – it’s perfect for when you make this dish again!
