Main Ingredients

  • Canned Saury 1 can (400g)
  • Onion 1/2 medium
  • Aged Kimchi 1/4 head
  • Green Onion 1/3 bunch
  • Korean Green Chili Pepper 1/2 (optional)
  • Radish 2 slices

Seasoning

  • Soy Sauce 1 Tbsp
  • Cooking Wine (Mirin, etc.) 1 Tbsp
  • Minced Garlic 1/2 Tbsp
  • Gochujang (Korean Chili Paste) 1/2 Tbsp
  • Gochugaru (Korean Chili Flakes) 1 Tbsp

Cooking Instructions

First, dice the onion into roughly 1 to 1.5 cm cubes. Slice the radish into thick strips, about 0.5 cm thick, suitable for stew.

In a pot for the stew, lay the sliced radish at the very bottom. Placing the radish at the bottom allows its refreshing taste to infuse into the saury as it cooks, creating a richer, deeper flavor. On top of the radish, add the diced onion and the canned saury. It’s recommended to drain off some of the oil from the canned saury before adding it.

Pour water into the pot, enough to about half-cover the ingredients (approximately 500ml). Bring to a boil over high heat. Once the onions appear translucent and start to cook, add all the prepared seasoning ingredients (soy sauce, cooking wine, minced garlic, gochujang, gochugaru) to season the stew.

Once all ingredients and seasonings are in the pot, cover and simmer over medium heat for about 10 to 15 minutes until it boils vigorously. The stew will reduce slightly, allowing the flavors to meld beautifully. For a spicier and more robust flavor, thinly slice the half Korean green chili pepper and add it to the stew. Finally, add the diagonally sliced green onions and simmer for another minute or so until done. Enjoy!
