- 1/2 tsp salt
- 1/2 Tbsp soy sauce
- 1 Tbsp sesame oil
- 200-300ml water
Sauce Ingredients- 2 Tbsp soy sauce
- 1 Tbsp water
- 1/2 Tbsp plum extract
- 1/2 Tbsp sesame oil
- Sesame seeds, for garnish
- 5 eggs
- 1/2 tsp salt
- 1/2 Tbsp soy sauce
- 1 Tbsp sesame oil
- 200-300ml water
Sauce Ingredients- 2 Tbsp soy sauce
- 1 Tbsp water
- 1/2 Tbsp plum extract
- 1/2 Tbsp sesame oil
- Sesame seeds, for garnish
Cooking Instructions
Step 1
First, peel the carrot and dice it into very small cubes. Finely chop the scallions (or chives). The smaller you dice the vegetables, the smoother and prettier your steamed egg will be.
Step 2
Gently press the tofu with paper towels to remove excess water. Then, cut it into long pieces about 1.5cm thick. Cutting them too thinly might cause them to break apart during cooking, so maintain a moderate thickness.
Step 3
Prepare a deep, microwave-safe dish. Arrange the cut tofu pieces neatly at the bottom of the dish. Evenly sprinkle the diced carrots and chopped scallions over the tofu.
Step 4
In a bowl, crack 5 eggs. Add 1/2 tsp salt, 1/2 Tbsp soy sauce, 1 Tbsp sesame oil, and 300ml of water. Whisk gently with a spatula or chopsticks until just combined, avoiding too much foam. Carefully pour this egg mixture over the tofu and vegetables in the dish. Be mindful not to let the egg mixture spill over the vegetables.
Step 5
Microwave for 5 to 7 minutes. The cooking time may vary slightly depending on the amount of egg mixture and your microwave’s power. It’s done when the egg mixture is set and firm. You can test for doneness by inserting a toothpick; it should come out clean.
Step 6
Finally, let’s make the dipping sauce! In a small bowl, combine 2 Tbsp soy sauce, 1 Tbsp water, 1/2 Tbsp plum extract, and 1/2 Tbsp sesame oil. Mix well. Sprinkle with sesame seeds for extra flavor and visual appeal, if desired. Drizzle this sauce over the finished steamed egg and enjoy!
