How to Make Delicious Stir-fried Zucchini with Fermented Shrimp
This simple yet flavorful stir-fried zucchini dish combines the mildness of fresh zucchini with the savory kick of salted fermented shrimp (saeujeot). Main Ingredients- 1 medium zucchini
- 1/2 red chili pepper
- A small amount of green onion
- 1 tsp minced garlic
- 2 Tbsp perilla oil
- 3 Tbsp water
Seasoning- 1 Tbsp salted fermented shrimp (saeujeot)
- 1 Tbsp salted fermented shrimp (saeujeot)
Cooking Instructions
Step 1
Wash the zucchini thoroughly under running water and slice it into half-moon shapes. Avoid slicing them too thinly, so they maintain a pleasant texture after stir-frying.
Step 2
Remove the stems from the red chili pepper, wash it, and mince it finely. Peel and wash the green onion, then slice it thinly. Prepare the minced garlic.
Step 3
Heat a frying pan over medium heat and add 2 tablespoons of perilla oil. Sauté the minced garlic until fragrant and lightly golden. Then, add the sliced zucchini and stir-fry. Once the zucchini starts to soften, add 3 tablespoons of water and continue to cook until it becomes translucent. (Tip: Using perilla oil when stir-frying aged namul or vegetables enhances their aroma and nutty flavor, making the dish even more delicious.)
Step 4
When the zucchini is slightly cooked, add the minced red chili pepper and sliced green onion. Stir-fry them together just until their colors become vibrant.
Step 5
Finally, add 1 tablespoon of salted fermented shrimp (saeujeot) and stir-fry evenly to season. You can adjust the amount of saeujeot according to your preference. Turn off the heat once seasoned.
Step 6
Transfer the beautifully stir-fried zucchini to a serving plate. Your delicious side dish is now ready to be enjoyed with rice!
