Ingredients

  • Pork shoulder 300g (cut into bite-sized pieces)
  • Curry powder 200g (your favorite brand)
  • Minced garlic 1 Tbsp
  • Potatoes 300g (peeled and cut into large chunks)
  • Onions 300g (cut into large pieces)
  • Carrots 200g (finely diced)
  • Zucchini 200g (sliced into half-moons)
  • Green chili peppers 5 (seeds removed and sliced diagonally)
  • Cooking oil 3 Tbsp
  • Water 1.5L (about 7.5 cups)
  • Black pepper 1/2 tsp
  • Parsley flakes (for garnish)

Cooking Instructions

Begin by preparing the pork by cutting it into desired bite-sized pieces. Wash and trim all the vegetables. Peel the potatoes and cut them, along with the onions and zucchini, into large, chunky pieces. Dice the carrots into smaller cubes. For the green chilies, slice them diagonally after removing the seeds.

Heat a deep pot or Dutch oven over medium heat. Add the cooking oil, minced garlic, and the prepared pork. Sprinkle in the black pepper to help eliminate any pork odor. Sauté the pork until it’s browned on the outside, about 5-7 minutes.

Once the pork is about halfway cooked, add the carrots, potatoes, and onions to the pot. Stir and sauté for another 3-5 minutes, allowing the vegetables to soften slightly and their natural sweetness to develop. The carrots should start to become slightly translucent.

Pour in the 1.5L of water and bring the mixture to a boil over high heat. Once boiling, reduce the heat to medium-low, cover, and simmer for about 10-15 minutes, or until the potatoes are tender. Add the sliced zucchini and green chilies, stir gently, and then immediately turn off the heat. Adding these vegetables at the end helps maintain their fresh, crisp texture.

With the heat off, gradually add the 200g of curry powder, stirring continuously to ensure it dissolves completely without any lumps. Once the curry powder is fully incorporated, turn the heat back on to low. Simmer gently for another 2-3 minutes, stirring occasionally, until the curry thickens to your desired consistency. The curry should be bubbling gently when it’s ready.
